The Kitchen

Sören Herzig cooks with a clear, balanced hand and top-quality produce, building courses that are technically exact without tipping into spectacle. The Tristan lobster, served with pumpkin, pear and koji rice, is the dish the room is known for, and the pigeon étouffée with curd, calvados and Piedmontese hazelnut shows the same instinct for layering richness against acidity.
