About Hokklo

The yellow croaker arrives steamed in a wine-lees sauce, golden and faintly sweet, and it is the dish that won Hokklo its star in the first Michelin Guide Fujian in 2025, one of only five stars awarded in the inaugural edition. Du Guojin, a Quanzhou native with more than twenty years behind Minnan stoves, runs the sixth-floor dining room of the Waldorf Astoria at No. 1 Lianhua North Road. Count on ¥400-plus a head before wine, and book the private rooms with park balconies well ahead.

The Kitchen

Du cooks the old Minnan repertoire with a restorer's discipline rather than a fusionist's itch. The signatures read like a Fujian almanac: the steamed wine-scented yellow croaker, mud crab braised in aged wine with dried longans, and a Hakka-style He Tian chicken claypot cooked with salt and wine. The name Hokklo itself means hospitable in the local dialect, and the kitchen takes the word as a brief, with a chef's table whose menus are written guest by guest with advance notice.
