A Dining Guide to Cologne

Cologne dines in two distinct modes. The Rhenish traditional mode. Centred on the Kölsch breweries (Früh, Päffgen, Gaffel, Sion) and their hausbrauerei dining halls. Pours light, filtered Kölsch beer in the distinctive 0.2-litre 'Stange' glass and serves heavy regional classics: Himmel un Ääd (mashed potato with apple sauce and blood sausage), Halve Hahn (rye roll with Gouda, pickle, and mustard), Rheinischer Sauerbraten, and roasted pork knuckle. The second mode is the city's serious fine-dining scene, concentrated in the Belgisches Viertel and Rheinauhafen districts. Approximately 30 Michelin-recognised restaurants operate in the metropolitan area, with Ox & Klee and Le Moissonnier holding two stars apiece.

Where to Eat

The Altstadt (Old Town) holds the traditional brauhäuser. The Belgisches Viertel has become Cologne's creative gastronomy quarter. Ox & Klee is here, as are Taku, Astrein, and a cluster of serious bistros. Rheinauhafen (the converted harbour district with its three glass 'Crane Houses') is where architectural fine dining has concentrated. Agnesviertel, north of the Old Town, has the most interesting natural wine bars and modern bistros.

Reservation Tips

Ox & Klee and Le Moissonnier both require 3 to 6 weeks for weekend tables. Saturday in particular. Taku (inside the Hotel Excelsior Ernst) needs 2 weeks. Traditional brauhäuser like Früh am Dom accept walk-ins but generate long queues at peak times (12:00 to 14:00 lunch and 18:00 to 20:00 dinner); expect to share communal tables.

Tipping & Service

Service charge is not automatically included in Germany. Round up 5 to 10% at a traditional brauhaus, 10 to 15% at fine-dining restaurants. Tips are given verbally to the server at payment. State the total you want to pay rather than leaving cash on the table.
