The Verdict
Beluga was Hans van Wolde's two-star landmark until 2019, when his former sous-chef Servais Tielman and Stephanie Tielman bought it and renamed it Beluga Loves You. The stars reset with the sale; Tielman won one back in January 2020 and has held it since. The cooking is his own — modern, ingredient-led, and more playful than the old room ever was.
The Kitchen
Tielman builds dishes around origin: a single high-quality main ingredient, sourced with intent, then worked through contrasting textures and bright, clean flavours. Menus run four, five or six courses at lunch and six, seven or eight at dinner; the Servais Selection pairs four courses with an aperitif, four wines and water for €155. Downstairs he runs KOMBU, a separate counter in the cellar, for a different kind of night out.
The Room
The restaurant sits on Plein 1992 in Maastricht's Céramique quarter, a contemporary district away from the medieval centre — fitting for a kitchen this modern. The dining room is sleek and low-key; service under Stephanie Tielman is precise and unstuffy. It survived a 2023 financial scare and was rescued, which the regulars have not forgotten.

A birthday dinner wants a little theatre, and Tielman's plates deliver it without tipping into spectacle. Take the Servais Selection so the kitchen drives the night, sit back for the wine flight, and let a modern one-star room mark the date properly.
