The Verdict

Salt Café & Restaurant is the rooftop dining room on the 6th and 7th floors of the Shinetree Building in Malé, and the capital's most convincing argument that resort-level cooking can be found in the city. Its executive chef, Mohamed Adil, joined in February 2022 after an apprenticeship at Four Seasons and a spell as executive sous chef at Dhigali Maldives, and was named Best Maldivian Chef in 2016 — a title he went on to win twice more.

The cooking is Italian-inspired with a strong seafood thread. Chef Adil's signature Raved Pasta — Maldivian lobster agnolotti with a tomato and basil emulsion and mustard cress, with an option to add caviar — is the dish the kitchen is known for, while his Whispering Ocean plate of snapper mosaic with green peas, saffron potato and orange beurre blanc shows the plating he describes as 'art on a plate.' Trained in teppanyaki by Chef Kato at Four Seasons, Adil brings that technique to the rooftop too.

A set lunch starts at MVR 100, with à la carte dinner priced higher for the lobster and seafood courses. Malé is a dry city, so there is no wine list, but the mocktail program is among the most serious in the capital. The rooftop fills in the evening, and the city and sea views are the draw a ground-floor room cannot offer.
